Recipe For Spotted Dick (or Spotted Dog)

I have had several requests for English recipies - most of them for the
delicacy called 'Spotted Dick'. Well, just for
you, here it is:

Ingredients

1-3/4 cup fresh or 10 oz. sweet suet pastry (see below) 

1-3/4 cup fresh or 4 oz. raisins or currants (or dates or figs) 

1-3/4 cup fresh orgrated rind of 1 lemon 

Method

Roll out pastry into a strip about 10 in. long and 3/4 in. thick. Lay
raisins over pastry, leaving a 1/2 inch margin all
around; press raisins in lightly and sprinkle with lemon rind. Moisten
edges and rollup from one of the long sides;
seal edges firmly and roll in a floured pudding cloth. Make a pleat in the
cloth to allow pastry to expand and tie
ends firmly. Boil or steam for 1-1/2 hours and serve with raspberry sauce,
butter and brown sugar.

Sweet Suet Pastry:

Mix to a stiff consistency:

1 lb. plain flour, 6 oz. caster (brown) sugar, 1 oz. baking powder, 1/2 lb.
finely chopped suet with skin removed,
1/2 pt. milk.

(microwave)

Good old fashion Spotted Dick done in the modern way. fast and easy
 in the microwave.



Ingredients:

8oz self Raising Flour
4 oz Suet
4oz Mixed fruit
3oz Sugar



Method:

Sieve flour into a mixing bowl. Add suet, mixed fruit and sugar mix well.
 Add enough water to form into a firm ball.
 Roll out on a floured surface into a sausage shape, about 16 inches long.
 Place around the edge of a plate that is suitable for the microwave.
 Cook for 6 to 7 mins (650) watts.
Serve with custard.

Make several and put some in the freezer. Then just re-heat.
