There are also lots of old ways to exploit evaporation as a cooling
process, beyond the obvious courtyard-fountain stuff. One of the simplest
is a porous terra-cotta cylinder, open at the top, just big enough for a
wine bottle and a bit of water. As the water percolates out and evaporates,
it'll take the wine down to 50 F. or so even in hot, humid weather.
It worked just fine on the patio last night when Stanley Kauffmann, Peter
Greenaway, the Ghastly Fop and I sat late to finish a case of really quite
splendid Graves.
