It's Cyrr not Kirsch, which is something different. A champagne cocktail with cyrr (sometimes
written kyrr or kir) is called a cyrr royal, and was named for the abbas of Cyrr who 'discovered'
it. You just have to pour in a tiny little bit, and not an ounce or so. With white wine, the more
usual version, it is a fresh thirst killer; the champagne version is offered as an appetizer only.
But we could get a pynchon-cooking-l list started as well.
Michel.
