According to the Pynchon Wiki, it's a template for a type of American folk joke.  E.g.:
 
She was only a Boot-maker's daughter --
but she said 'Shoo' to all the men.

She was only a Fruiterer's daughter --
but she gave all the chaps the raspberry.
