Basically, you have to email in "plain text" to ensure clean text.
Most email programs have a "plain text" option. If you type in Word, or whatever else, you can just paste your text into an email and then use your email program to convert it to plain text.
In Hotmail, for example, you have to use the "Classic" version of Hotmail -- once you are in the Classic mode, there is a "link" just above the body of your email that says "Show plain text" -- just click it, and your text is converted.
