You're right, I think, about the importance of
Bigfoot. The relationship between him and
Doc would be key to any successful translation
to film. M. Downey, Jr., while not quite right
physically- in my mind- for the role of Doc, is
probably resourceful enough to pull it off. In the
inherent circularity of the narrative, Doc is sort
of "Littlefoot." Shasta, who sees through all
Doc's disguises, does, indeed, nail it, and
recognizes their similarity and codependence.

Jeff Bridges, clean shaven and short-haired,
is my choice for Bigfoot.
