3 c sifted flour
2 c turbinado sugar
6 tbsp cocoa or roasted carob powder
2 tsp baking soda
1 tsp salt
2 c cold water
10 tbsp cooking oil
2 tbsp vinegar
2 tsp vanilla
Mix dry ingredients. Add wet ingredients and mix with spoon until nearly smooth. Pour mix evenly into two 9 inch pans. Bake for about 1/2 hour (until a toothpick poked into the center comes out clean).
We usually cover the top of each cake with thinly sliced disks of kiwi and strawberry instead of frosting. Then stack them. Woohoo.
