The Mystery Pie

grate rind of one lemon and one lime. turn into a stainless steel pot. add half a pound of tofu, one cup water, and two-thirds cup maple syrup. sprinkle top with two and one-fourth tablespoons agar-agar. cover and slowly bring to a simmer, then simmer five minutes.

meanwhile, squeeze lemons and limes and measure juice. you will need one half cup lemon/lime juice total, which requires about two or three more lemons or limes. combine juice with one third cup oil and one-eighth teaspoon salt. set aside. measure one and one-half cups soy milk (i prefer silk) and set aside.

turn tofu and agar into a food processor or blender. gradually add juice, oil, and soy milk. when mixture is quite smooth, pour into a premade whole wheat vegan pie crust/grahamcracker pie crust and bake.. as you would a.. regular pie, i suppose. um, actually i'm not sure. my mommy did this part for me while i wasn't home.

there's also an almond cream topping to go on top to make it more like a keylime/lemon mousse type deal, but i didn't make that and it was still plenty tasty.
