Fruit Tarts
crust
2c flour
1t salt
1/3c sugar
2/3c margarine
1/4c water
Mix dry ingredients. Remove 1/3c and mix it with water to form a
paste. Cut margarine into remaining flour mixture until pebbly, then
add paste and knead. Pastry cutters are your friend. Roll out into
6" circles.

3 apples
2 pears
some blueberries
1c turbinado sugar
2-3T margarine
cinnamon
nutmeg
cloves
pinch of salt
lemon juice
cornstarch
Cut and peel apples and pears and stir in a pot with lemon juice.
Spice to taste. Start cooking and add in everything but cornstarch and
blueberries. Stir in cornstarch about a half teaspoon at a time until
liquid is absorbed into a gel, whatever consistency you like. Then
add berries and stir. Spoon filling into pastry circles and pinch the
edges together firmly. Poke holes in tarts with a fork, brush with
melted margarine, and sprinkle sugar on top.
Bake at 350 degrees for about half an hour.
