When I read Moby Dick (years before I read Gravity's Rainbow, but after I 
had read V.) it seemed rather post-modern to me, and I think comparison 
to Gravity's Rainbow might well be fruitful.  But I've never talked to 
anyone who found the same things in Moby Dick as I did.

Moby Dick certainly doesn't have the open-ended character that you find 
in Pynchon.  But it has some of the same stuffed-full-of-this-and-that 
texture, and (in my unpopular opinion) a similar playfulness and audacity 
in the way themes are woven together.
