Prior to modern conveniences it was customary for a larger home to
have outbuildings -- smaller buildings used for special purposes.
The most common was a "summer kitchen," which was used for
cooking during summer so as not to heat up the Big House. Other
outbuildings might include a privy, a smoke house, and so on.
