Bananas are a fine fun fruit might be our author's general authorial intent, a happy food from the warm climes so positive in most of his fiction. Pirate's banana breakfast in GR, amidst the worst with even more than the worst on the way, is unforgettable. 

Why's Bigfoot got a trademark on chocolate-covered ones? 

"Pretty cold, Bigfoot, even for you", says Doc shortly.

I read it as an internal allusive metaphor for what has happened to that happy fruit, that symbol of joy amidst destruction, of recent happy times
in Gordita Beach Its natural bananagoodness gilded over and frozen, like stopping/changing that happiness cold.
